Ingredients
- 6 eggs
- 1 tablespoon Mustard (Colman is the standard, but you can use dijon or sriracha or any mustard you like!)
- 3 tablespoons mayonnaise
- 1 tablespoon butter, softened
- 1 tablespoon sweet relish (or a tsp or 2 of pickle juice)
- salt and pepper to taste
- hot sauce (your choice) to taste- I use about a teaspoon
- Sprinkle paprika
Instructions
- Prepare hard-boiled eggs or you can get pre-cooked and shelled at many grocery stores
- Place 5-10 drops of liquid food coloring (there are MANY natural options) or a dollop of gel color into the bottom of a shallow bowl for each color you want. Add water to the bowl and stir to combine with the food color.
- Line a plate with paper towels.
- Remove the peels from the eggs and slice in half lengthwise. Gently, remove the yolk placing it into a medium bowl. I rinse the cooked egg whites before adding to the food coloring bowls.
- Place the egg white halves into the prepared bowls of color. Let the egg whites sit in the liquid for at least 10-minutes, but up to 15-minutes to reach the desired depth of color.
- In the bowl with the egg yolks, add in the mayonnaise, mustard, butter, pickle relish/juice, and hot sauce. Mash/mix to combine. Salt & Pepper to taste.
- Scoop the egg yolk mixture into a piping bag if desired. (It makes it pretty!)
- Once the egg white halves are dry, pipe the egg mixture into the cavity.
- Sprinkle the tops with paprika.
- Enjoy!
