What's Valentines Day without Chocolate?? How about Gluten Free Flourless Chocolate Cake?

Let's do it a little different and make flourless chocolate cupcakes! I promise these are amazing and will be a hit with kids and adults alike!

Preheat the oven to 325 degrees F.


10 Tablespoons butter

1 3/4 cups semi-sweet chocolate chips

Melt together butter and chocolate chips in a glass bowl (micro safe please) in the microwave. Try 1 minute, then intervals of 15 seconds... 2 minutes max. Whisk well until blended, set aside.

6 eggs

1/4 cup white sugar

1 t. vanilla extract (g.f. pls) or for the grown ups a splash of your favorite liquor

In a large bowl beat eggs, sugar and vanilla. You can use your stand mixer or just a whisk. Get a good workout whisking until the mixture is pale yellow. Let rest 5 minutes.

Gently fold the chocolate mixture into the egg mixture (no more whisking). Be gentle! Let the batter rest at least 10 minutes.

We're doing cupcakes, so get out your pan and don't forget liners. Fill each about 1/2 full with batter.

Bake for 14 minutes in your preheated oven. Do not overbake!!

Cool completely.

Now, some would consider this a failure... but if you're lucky, the centers may sink in. It means your batter didn't rest enough. But... I think this is awesome. It's a little hole for marshmallow fluff or caramel or anything you like. Then, pick the frosting of your choice and go over the entire top. Yum!!!
