As long as we're blogging, how about some great gluten free recipes that are easy to make and super delicious! Gary & I are gluten free and this is a favorite!
If you like, double the recipe... it's worth it!
1 1/2 cups cooked rice (we use brown and steam it ahead of time)
1 can sweetened condensed milk
1 can (15 oz) evaporated milk
2/3 cup milk
1 T. g.f. vanilla extract
In a heavy pot, stir together all the milk products.
Add the eggs and stir in well. Cook on medium heat until thick... about 10 minutes.
Add the cooked rice, stirring until all clumps are gone.
Remove from heat and add vanilla and cinnamon to taste.
Transfer to bowl or pan of your choice and sprinkle with cinnamon.
